Procedure
Set the oven to 200 degrees centigrade. Remove the fish skin from the fish fillets. Make sure the skin is as clean as possible and without fish residues. It required some handiwork. When the fish skin is ready, sprinkle salt and pepper on both sides before laying it with the skin side up on the baking paper. Fry in the oven for about 15 minutes. But be sure to check regularly as they can burn quickly. They become wonderfully airy and crispy and become a true game changer, as a snack next to the food or on top of the fish as crispy garnish.
